Instructions

Buttermilk Biscuits

  1. Mix together flour, baking powder, sugar, and salt.
  2. Add butter, and cut into flour or blend in a food processor until sandy
  3. Add buttermilk and mix until incorporated
  4. Heavily flour the dough and turn onto a work surface.
  5. Fold and flour the dough, making sure the dough does not stick to work surface. Fold about 3 times
  6. Preheat oven to 425°F
  7. Cover and let dough rest for 30 min. (make sausage gravy while waiting)
  8. Roll out dough to approx 1.5" thick
  9. Cut into desired shapes and lay out on sheet pan
  10. Bake at 425°F for approx. 10-15 min, until golden brown

Sausage Gravy

  1. Melt the bacon fat
  2. Brown the pork or sausage
  3. Add the flour and mix well. Cook the flour through, about 2 min
  4. Add the milk and scrape brown bits from the bottom of the pan
  5. Once gravy has thickened, simmer for about 3 min
  6. Season with salt and pepper to taste
  7. Serve over buttermilk biscuits

Notes

*dry pork is if you’re repurposing overcooked pork. I chopped mine in a food processor with some fresh sage.
