  1. Put powdered sugar, almond meal, and graham crackers into food processor for 2 minutes
  2. Make meringue by whipping egg whites in a mixer until foamy
  3. Add cream of tartar and continue whipping until soft peaks
  4. Gradually add granulated sugar in a small stream
  5. Add caramel color, and continue whipping until stiff peaks
  6. Fold meringue into graham cracker mixture until batter resembles molten lava
  7. Pipe on silpat or parchment 3 in wide
  8. Tap tray on countertop to release air bubble
  9. Let dry for 20 minutes, or until tops are dry to touch
  10. Heat oven to 300°F
  11. Bake for about 11 min, or until able to poke without shells sliding off the feet
  12. Cool and match with same size shells
