  1. Put sugar in a pot and cover with just enough water to moisten over high heat
  2. Make sure everything is scaled out and ready to go
  3. When the sugar starts to show color, check color by stirring and holding up sugar drop to the light
  4. Deglaze with water once it reaches a light amber color
  5. Add cream and cocoa powder and stir, simmering for a minute
  6. Add butter and stir until incorporated
  7. Strain and chill.
